5 Easy Halloween Dinners To Throw Together Before Trick or Treating

I'm gonna level with you here: I love my Crockpot. Like, really, really love it.

I'm not the world's greatest cook, I'll be honest with you, so in my eyes, a contraption that allows me to have dinner prepped and ready to go feels like a small gift from the heavens. I get super stressed in the evenings because it feels like my kids are on some kind of crazy pills and my whole house is crumbling around me and the very last thing I feel like doing is whipping a Master Chef competition.

Anyways, the point is 1) crockpots are awesome 2) crockpots are even more awesome for crazy busy nights like — you guessed it– Halloween night.

Sloppy Joes

At this very minute, I have a pot of sloppy joes simmering away in my crockpot because we have a full schedule of kids' activities and my own exercise class going on tonight. Mama ain't got no time to cook. Although canned sauce would be even easier, it took me literally 20 seconds to whip up a homemade sauce that made me feel better. Get the recipe here.

Italian Crockpot Chicken

Chicken and rice is a classic meal in our house, but I admit it's hard to not get stuck in a rut when it comes to such staple foods. This variation of the classic chicken and rice uses the crockpot and mixes up the ingredients a bit to let you spice things up. Get the recipe here.

Slow Cooker Ribs

You'll get bonus points for the ribs giving a nod to Halloween with this meal, but for the easiest rib meal ever, just toss in some thawed ribs, coat with barbecue sauce, and put on low for 10-12 hours for tender and juicy meat.

Chicken Fajita Soup

Thai Yellow Curry

I have not made this vegan recipe, so I can't speak to its level of kid-friendliness, but hopefully your kids are a bit more adventurous than mine. And it's so pretty! And colorful!
