The Perfect Cake for your Next GNI (Girls Night In) — Hint: It Has Kahlua!

Robin Shreeves wrote a gloriously well received article about “scruffy hospitality” for Mother Nature Network. In it, she champions the idea that when we authentically let our mess out and our friends in, our friendships strengthen and our joy rises.

Speaking straight to the heart of each of our inner critic, she wrote:

“It's hard to let go of the belief that our homes need to be picture-perfect — or maybe I should say ‘Pinterest-perfect' — before we can welcome guests over. But the idea that we must make our home look un-lived in before having people over stops so many of us from sharing life together.”

And her beautiful call to action? Was this:

“For anyone whose home is not naturally company-ready, I encourage you to embrace this concept of scruffy hospitality. Open up your home, big or small, as-is. Value community over tidiness. Invite people over and say, ‘I don't know what I'm serving. I may have to order pizza. I would just love your company.'”

This is — 100% — an idea I can get behind.

And as a busy mom, juggling so very many things, while sometimes I’m definitely in the mood for a night out dancing or a family dinner with kids, sometimes it’s just a simple Girls Night In (GNI) that my soul craves.

And for that GNI, there’s only one thing I can think of that would make a (scruffy!) night in complete – along with jammies, wine, real talk, and a ‘lil music playing.

And that something, is Kahlua Cake.

When I first moved from California to Minnesota, a co-worker handed me this recipe, written in her careful script on a flower-bordered index card and I have absolutely adopted it as my own.

It’s simple to make — and even starts with cake mix! — and is an absolute crowd pleaser. And the main ingredient? Is Kahlua.

So for your next GNI, I invite you to skip the dusting, and make the cake. It’s the right choice, I promise, because nothing says you are my people more than a slightly messy counter and cake just out of the oven.

7-Ingredient Kahula Cake For Your Next Scruffy GNI

Ingredients:

1 box chocolate cake mix

One 3-ounce box vanilla pudding

¾ cup Kahlua

¾ cup vegetable oil

16 ounces sour cream

4 large eggs

1 cup chocolate chips

Directions:

  1. Preheat oven to 325 degrees.
  2. Grease and flour your pan.
  3. Blend all ingredients — except the chocolate chips — adding one ingredient in at a time, until smooth.
  4. Stir in the chocolate chips.
  5. Bake for 1 hour, until a toothpick inserted in the center comes out clean.
  6. Let cool and serve with vanilla ice cream, if desired.
