Super Smoothie Me!
When the calendar marks the beginning of a New Year the resolutions fly into action, especially when it involves our food & diet. We have every intention to make better choices, eat healthier, and leave the snacks behind. But what if there was a food that you could incorporate into your everyday diet that was super healthy, super tasty, and you could enjoy as a snack or a meal?
The perfect food to help you keep that resolution in check for the rest of the year is none other than the Super Smoothie! Last year I had a goal to incorporate one smoothie every other day into my meal plan. I was pleasantly surprised to find how easy and delicious this could be and the fact that each blend packed an enormous nutritional punch was an added bonus!
Two fantastic recipes that have top honors in my glass are the All-Star Fruit and Kale & Spinach. Now before you wrinkle your nose at the latter, just try it! It’s actually sweeter than you would expect and will take care of your daily vegetable & fruit servings all in one glass!
All-Star Fruit Smoothie
I found this recipe purely by accident. I had a leftover fruit tray from a party and decided to blend it up and see what flavors developed. WOW! It was so amazing that it became one of my favorites, especially during the warmer months.
You will need:
1 cup watermelon, cut in large cubes
1 cup red grapes
1 cup strawberries, cut in half
1 cup pineapple, cut in large chunks
Place all into a blender and on puree setting pulse until mixed. If you would like more watermelon flavor, add an additional cup. Serve in glass and enjoy!
This recipe is full of vitamins and antioxidants. If you would like this to be more of a shake consistency, add 2 Tbsp. of vanilla Greek yogurt. You will be pleasantly surprised with this recipe!
You will need:
1 cup kale, washed and torn
1 cup baby spinach, washed
1 cup iceberg lettuce, washed and torn
2 kiwi fruit, peeled and sliced
½ green apple, washed and sliced
½ cup green grapes
½ Anjou pear, washed and sliced
1 banana (optional)
½ cup coconut water (optional), you can use plain water or apple juice instead
Blend on puree setting until smooth. If you would like a thicker consistency, add 2 Tbsp. vanilla Greek yogurt and 1 cup of ice cubes.
