Sausage Sweet Potato Soup: A Hearty, Healthy Meal

Sausage Sweet Potato SoupNothing beats coming home to a simmering pot of soup, especially on a cold fall day. When the mercury starts to slide, it's time to chop up all the healthy veggies, infuse broth with herbs from the garden, and try to decide if pasta, meat, or legumes will be included. Maybe all of them will suffice.

Soup is soul food. It is the go-to meal for when we feel under the weather and is something to bring to a friend or family in a time of need, either with the passing of a loved one or just home from surgery. It is comfort food to the max and eating it makes us feel better.

As winter settles in, I eat a lot of soup. I enjoy it as a main dish or as a great companion to a salad or sandwich. To say I have a lot of recipes for this meal would be a gross understatement, but that never deters me from searching out new ones to try. When I found this recipe last year in the November issue of Everyday Food, it quickly became a favorite. It’s hearty, packed with nutrients from kale and sweet potatoes and has the lean protein of sausage. I like to buy the Italian sweet sausage patties since they already have the casings removed and are easier to cook and break apart.

Sausage Sweet Potato Soup

  • 1 tbsp. olive oil
  • 1 large onion, diced
  • 2 cloves garlic, minced
  • ¾ lb. Italian sausage, casings removed (I used 4 Italian sausage patties)
  • 1 lb. sweet potatoes (about 2 medium), peeled and diced
  • Salt and pepper to taste
  • 4 cups chicken broth
  • 2 cups water
  • ¾ cup small pasta (shells or bow tie)
  • 4 cups chopped greens, such as kale, Swiss chard (or both!)
  • Grated parmesan cheese (optional)

To Make:

1. In a 5-qt pot, heat oil over medium heat. Add onions and garlic and cook until translucent, about 10 minutes.

2. Add sausage and salt and pepper. Cook over medium-high heat, breaking up sausage with spoon, until golden brown, for about 5-8 minutes.

3. & 4.  Add the diced sweet potatoes, broth and water. Bring to a boil.

5. Add pasta and cook for 4 minutes. Turn heat down to simmer and add greens.

6. Cook until pasta is tender and greens are wilted, about 4 minutes.

7. Serve with parmesan if desired.

Soup is a perfect way to enjoy leftovers and a healthy way to get vegetables and lean protein into the diet. As long as you follow a basic template of minimal fat (olive oil), onions, garlic, and broth (chicken, beef, seafood or vegetable) you are set to take your dish anywhere your heart desires.
