Roasted Veggies: The Best Kept Secret in the Kitchen

Do you have picky eaters when it comes to vegetables? You know, those that try to hide the broccoli under something else thinking they have fooled you into believing they are part of the “Clean Plate Club?” What if I told you I have the best kept secret in the kitchen when it comes to serving up daily requirements of nutritious, vitamin rich foods? The answer is roasted veggies my friends!  Almost any vegetable you find in the produce section can be roasted into such rich, sweet flavors that kids will eat them up like candy.

I was fortunate in the area of vegetable lovers. My kids have always loved them and prefer sliced red peppers over cookies. Not that they don’t like cookies, but when packing snacks for a day at the park, they have always reached for the peppers. Lucky I tell you.

One of the discoveries I had a few years ago was the art of roasted veggies and how the simple process of using a little olive oil and sprinkle of kosher salt can bring out such incredible flavor after cooking for a mere 30 minutes. I will make big batches of these treats and keep them for dishes throughout the week. This is the perfect time to try the bright, colorful options such as purple and orange cauliflower, beets, rainbow swiss chard, acorn or butternut squash.

Homemade French fries are easy; slice sweet potatoes into thick wedges, drizzle with a couple tablespoons of olive oil and kosher salt, and place in a 375 degree oven for 20-30 minutes. Stir with a spatula after 10-15 minutes.

Not a potato fan? Try baby carrots instead! Use a small bag of baby carrots. Prepare as above and enjoy as carrot fries!

Asparagus is great too … easy to roast and delicious as a topping for pasta. Asparagus is delicate and does not take as long to roast, maybe only 15-20 minutes.

It’s always cheaper to buy a plain cheese pizza, but you can dress it up at home with awesome flavors! Create a tray of brussels sprouts, onion, carrots, garlic, and broccoli and top your next slice with goodness.

Don’t pass up those beautiful root veggies! Parsnips (they look like white carrots), beets, turnips, and fennel go together perfectly and make a super hearty vegetarian meal when served over polenta.

Really, the possibilities are endless. Roasted veggies not only taste great, they are packed with nutrients and vitamins we all need in our daily diets. Next time you pass by that bunch of broccoli because the kids refuse to touch it, try the best kept kitchen secret of roasting veggies! I think you will be surprised how fast a tray will disappear.
