Quick and Easy Microwave Rocky Road Brownies

microwave rocky road browniesOn any given day, I only use my microwave to either reheat something or melt butter & chocolate. I normally do not cook or make meals in this appliance, yet this summer I was infatuated with all the recipes I found for “mug cakes” on Pinterest. I tried a few and most were not that great. So, when I came across a recipe for Microwave Rocky Road Brownies in my fall/winter 2011 Season’s Best booklet by Pampered Chef I thought ‘why not give it one more try’.

The recipe seemed easy enough and I had all the ingredients in my pantry. On the bonus side, it only needed to cook for 5-7 minutes. How could I pass up a dessert rich in chocolate, marshmallow and even more chocolate with such a quick turn around? The answer is I couldn’t!

As with most recipes I find, I adapted this one for the Rocky Road Brownies to fit into my family’s likes. We are not huge fans of nuts in baked goods, so I omitted this step entirely, and chose to add as a topping instead. This, I will make again and again! It is perfect for when you need a quick dessert or just a little something special. I served with peanut butter ice cream and it was truly decadent.

Here is what you will need:

1 cup walnuts, chopped (I used as topping)

¾ cup flour

1 ½ tsp. baking powder

¼ tsp. salt

¾ lb. butter (1 ½ sticks) , cut in pieces

4 oz. semi-sweet chocolate, chopped

1 ½ cups sugar

3 eggs

12 large marshmallows cut in half

12 Hershey kisses, unwrapped

To Make:

In small bowl, combine flour, salt and baking powder. Set aside.

Coarsely chop chocolate squares.

In microwave safe bowl, add butter and chopped chocolate.

Microwave on high 30 seconds.

It will look like this:

Give a gentle stir and return to microwave for another 30 seconds.

It should now look like this:

If butter is not melted completely, that is ok. By stirring, it will melt.

Add sugar, then eggs to melted chocolate and whisk with metal whisk until combined.

Fold in the flour mixture.

Pour into glass 8”x8” pan.

Microwave on high for 5-7 minutes or until toothpick tests clean.

Next Steps:

  1. Place cut marshmallows on top of brownie. Add chocolate kisses randomly tucked in between marshmallows.
  2. Cover with wax paper and return to microwave. Cook 1-2 minutes, until marshmallows soften.
  3. Remove from microwave and let stand, covered for 5 minutes.

Carefully scoop out brownie and place in shallow dish or bowl. Top with your favorite flavor ice cream and chopped nuts.

Any time one can have chocolate and ice cream for dessert within a ten minute span is a total win in my book! Wouldn't you agree?
