Philly Cheese Steak: A Knock Out Sandwich

philly cheese steaksWhen the movie Rocky came out in the late 1970’s, folks were inspired by the underdog boxer to visit the “City of Brotherly Love” to accomplish their own climb up the 72 steps in front of the Philadelphia Museum of Art, raising a fist high in triumphant glory. The folks in Philly have had that same fist pump ever since because, not only have droves of people come to visit the hot spots of our founding fathers, but they also are discovering the pride of food traditions, such as the beloved cheese steak.

There is a spot at the end of the Italian street market, which Rocky Balboa famously runs through in his grey sweats and Chuck Taylors, called Pat’s Steaks. Here, Rocky stood in line as his loan shark Tony Grazzo bought him a cheese steak. This sandwich is so beloved that, more times than not, it is prefaced with “Philly” in its name.

When the calendar flips to November, it seems most dishes are turkey focused. I like turkey, but if I know a majority of meals will be based around this bird, I like to sneak in a little bit of steak every now and then to wake up the taste buds. This meal is perfect on cold fall nights or for quick hearty tailgate fare at the football game. It’s very simple to assemble, quick to put together, and very portable, as you can make a majority, if not all of it, ahead of time.

This sandwich is so beloved that, more times than not, it is prefaced with “Philly” in its name.

I tried something different with a homemade cheese sauce, which was something different. I’ll include it here for you, but if you don’t like it, by all means, substitute with a melty, gooey cheese like provolone or American. I would also recommend using a green or red pepper (or both). I only had yellow and orange, and where they still made for a tasty sandwich, I think it would have tasted better with the other colors.

Philly Cheese Steak

  • 1 tbsp. olive oil
  • 1 large onion, thinly sliced
  • 2 small peppers, one red, one green
  • 1 pound London broil, sliced into thin strips
  • Salt and pepper to taste
  • 4 Italian Bread sub rolls

Cheese sauce:

  • ½ cup evaporated milk
  • 1 cup shredded provolone cheese

To make:

Add oil to large skillet and heat over medium heat.

Add onion, peppers, salt, and pepper. Cook until onions are translucent and peppers are soft, stirring occasionally, about 10-15 minutes.

Remove to a plate.

In same pan (do not clean it out!), add a tiny bit of oil (about 1 tsp.) and add strips of steak and season with salt and pepper.

Cook, stirring until cooked through, about 3-4 minutes.

To make cheese sauce:

Place a small saucepan over medium heat.

Add evaporated milk and shredded provolone; whisk until melted and smooth.

Assemble with steak and vegetables in roll and drizzle with cheese sauce.

This cheese steak should definitely be in your rotation for a good hearty meal. It's sure to be a “knock out!”

    Delicious! I made these but I lightly browned some whole wheat tortillas and rolled it up in those.
