Pear Pistachio Appetizer Pizza
Our house is a busy one whether it be spring, summer, fall or winter. We have had many an evening entertaining on our patio by fireside or enjoying friends’ company around the kitchen table. I always have a bottle of wine at the ready and ingredients handy to make Pear Pistachio Appetizer Pizza.
Some of our closest friendships have been nurtured around a table and over a great meal. One of those friends, a foodie like me, always had the best snacks when arriving for playgroups. One summer day in particular, a few of us arrived with tots eager to play and moms ready for adult conversation. My friend served up the most delicious, simple snack and I was smitten to learn she was a stinky cheese lover too. On top of this mini-pizza was the melted gooey goodness of Gorgonzola cheese. When trying a wedge I was met with a snap of sweet from biting into a thin slice of pear, then a nutty crunch of pistachio followed by the sharp taste of cheese. The flavors complimented each other so well, I immediately asked her to teach me how to make it!
This little pizza is made on pita bread and can be made and shared all within 15 minutes tops. I’ve served it as an appetizer, but also as a light lunch or dinner, accompanied by a side salad.

What you will need:
1 small clove garlic, minced
2 Tbsp. olive oil
1 Bartlett or Anjou pear, sliced thin (as thin as you can make it)
1 Tbsp. shelled pistachio nuts, chopped
1 Tbsp. crumbled gorgonzola cheese
1 whole pita bread round
How to make:
Preheat oven to 350 degrees. Meanwhile, in ramekin or small bowl, combine olive oil and minced garlic. Let stand 10 minutes to infuse. Place pita round on ungreased cookie sheet. Brush top of pita with garlic oil (ok to keep little bits of garlic!) Top with sliced pears in fan (or tart) fashion. Add crumbled gorgonzola cheese. Top with chopped pistachio nuts. Bake in oven for 10 minutes or until cheese is just melted. Slice into wedges and serve. Recipe makes 1 pita. Adjust ingredients accordingly to make multiple pizzas.
