Mom’s Lasagna

I feel everyone should have their signature lasagna recipe. If you don't already have yours, I'm loaning mine out to you today.  This is the lasagna that my mom made at least once a month growing up.  She had a few rotating recipe and this was one of her favorites.  This lasagna recipe was probably also my grandma's, and maybe even her mother's as well.  It's tried and true and a comfort for anyone who has the pleasure of enjoying it.

The recipe is quite simple and only requires a few ingredients.  While you can spice it up a bit by exchanging some of the ingredients for more expensive ones, today I'm keeping it simple.  Lasagna noodles, tomato sauce, 2 cheeses, and ground beef are the main ingredients in this baked pasta. Once you have those, you are on your way to a successful dinner.  Sometimes I make this in advance and freeze it or I make double and freeze one.  If you do freeze it, you just need to defrost it before baking or bake for an extra 20 minutes.  

Mom's Lasagna

Ingredients
1 box lasagna noodles
1 pint cottage cheese
1 package mozzarella cheese (the kind that comes pre-grated in a bag)
1 large jar of marinara pasta sauce
1 package (about 3/4 lb.) lean ground beef or turkey

Directions
In a large skillet, cook beef until slightly brown and no pink is showing.  Transfer beef to a paper towel covered plate to drain the grease.  Cook noodles according to package directions. While the noodles are cooking combine the beef and tomato sauce in the skillet and heat to warm. 

In a rectangular baking dish (9 x 13) layer the pasta as follows:
1/3 of the beef and sauce
layer of noodles
1/3 of the cottage cheese


1/3 of the mozzarella
Repeat
layer of noodles 


last of the beef and sauce
remaining cheese


Cook at 350 degrees for 20-25 minutes
