Make Ice Cream Sandwich Cake In 3 Easy Steps!


I scream, you scream, we all scream for Ice Cream Sandwich Cake! Wait, what? That’s right – I have a treat that will make you look like you spent hours putting together and even make the ice cream man jealous! It is perfect for any picnic or event — or even just for after dinner. My neighbor brought this to a party a few years ago and I could not believe how incredibly easy it was to make.

Layers of the classic ice cream sandwich, topped with gooey hot fudge sauce, and topped with whipped cream, drizzled with chocolate syrup most definitely fits into our summer mantra of quick and easy. I made this for dessert on a Sunday evening and by Tuesday it was gone!

The number of sandwiches you will need will vary, depending on the size of your pan. I found a box of mini-sandwiches at my local store which were perfect for an 8×8 baking dish. For our purposes here, I will use the mini size versions…if using the full size treats, adjust accordingly.

Ice Cream Sandwich Cake

9 mini ice cream sandwiches

1 jar (11.75 oz.) hot fudge sauce

1 small tub whipped topping (Or you can do what I did – I made my own whipped cream using 1 pint heavy cream w/2 Tbsp. sugar, whipped)

Hershey’s Syrup

To Make:

Step one:


Unwrap all ice cream sandwiches and place 2 rows of 4 ½ pieces side by side in dish. (I cut 1 sandwich in half to fill whole pan)

Step two:

Cover entire top with a layer of hot fudge sauce. For the 8×8 pan, you will only need about half the jar.


Place in freezer for about 10 minutes to set.


Step three:

Cover with whipped topping or your own whipped cream. Drizzle with chocolate sauce.

Serve immediately, or place back in freezer until ready to serve. If frozen, let sit about 10 minutes to soften.
