Delicious Holiday Instant Pot Recipes That Will Impress

The holidays are coming, which mean two things: 1) time for food and 2) time for stress. Cheery, right? But, seriously, the holidays can be a difficult time for women, who seem to bear the burden of creating holiday “magic” for everyone else while running themselves ragged in the process. Just because you happen to have some X chromosomes doesn't mean you shouldn't get to enjoy the holidays too, am I right? Enter the Instant Pot. This pressure cooker has become a phenomenon with a cult-like following and for a good reason. It saves time, makes cooking easier on the kitchen-challenged among us (cough cough), and um, makes cooking easy.

Note: if you're wondering what the difference between a pressure cooker and an Instant Pot is, they are the same thing. Instant Pot is just a brand name for a specialized pressure cooker with some cool functions. But if you want to save a few bucks you can absolutely get an off-brand pressure cooker for the same purpose. Also, keep an eye out for holiday deals, I've seen Instant Pots go for as low as $30! And if you're new to the Instant pot or pressure cooker world, I would encourage you to check out the Instant Pot community on Facebook. There are a ton of pros in that group and more recipes than you will ever be able to cook. 

But the best way to learn to use your Instant Pot is to get your feet wet by trying it out. If you have an Instant Pot or another version of a pressure cooker, here's how to put yours to good use for the holidays with some Instant Pot recipes that are sure to impress.

Creamy tomato soup. I am obsessed with tomato soup. I don't really know why other than that I find it so comforting on a winter night. And paired with some homemade cheesy croutons? I'm done for. Because delicious! Anyways, this recipe for creamy tomato soup is a hit and I can attest because I've had my husband make it for me and it was divine. (Told you I'm kitchen-challenged!) 

Whole rotisserie chicken. I am deeply impressed by the person who thought of cooking an entire chicken in the Instant Pot, but there it is. It's completely possible to get a delicious, juicy “roasted” chicken–crispy skin and all–in 45 minutes with your pressure cooker. Amazing! Here's the how-to

 

Pulled pork. BBQ pork sandwiches are always a crowd pleaser. But they can take some time to prepare. With the pressure cooker, you can have them ready in a little over two hours (versus the full day it would normally take!). Get a recipe complete with homemade sauce from Jo Cooks

Breakfast casserole. Looking for a quick and easy holiday breakfast for your family or a brunch? Here's one to impress your guests–or just your kids. Breakfast casseroles are a go-to for holiday mornings or even a busy night. Warm and comforting, just the way I like my food. This recipe uses just five ingredients and I'm already drooling over it, just because it's morning time and I am hungry.

Spinach and artichoke dip. Everybody loves a good dip, especially at a holiday party. I always count spinach dip as totally healthy because it has spinach in it. And don't let anyone tell you otherwise. Make it in your Instant Pot and watch your guests flock to it like the health nuts they are.
