Gooey S’Mores Bars

One of the most well-loved summer desserts is often prepared while sitting around a campfire or your backyard fire pit. There is something about seeking out the perfect branch, whittled down to a point for a marshmallow, slowly turning it above the flames to get a crispy golden brown, and carefully squishing the toasted goodness between graham crackers and chocolate. I’m talking the famous S’mores of course!

I always keep a stash of chocolate bars, a bag of marshmallows, and box of graham crackers on hand from late May through early October because we cannot enjoy an evening fire without the kids asking “Do we have S’mores stuff??!” It just seems to go hand in hand, right?

This summer I have been trying to keep the mantra of “quick and easy” in every recipe. I know it doesn’t get any easier than putting this treat together, but when you have 90 degree heat plus high humidity for a two week heat wave, the last thing you feel like doing is having a fire outside!

So, I searched the internet for a taste of camping that we could enjoy in the nice cool air-conditioned house and I found the perfect recipe for delectable Gooey S’mores Bars! This recipe has been adapted from the Betty Crocker 2006 Grand Prize winner for Warm Toasted Marshmallow S'mores Bars. It is easy & quick and very versatile. We like our milk chocolate, but for this I only had semi-sweet which worked just fine. Also, to save time putting this together, I used a box of graham cracker crumbs (usually found with the pie making supplies and premade graham cracker pie crusts) instead of crushing up the crackers I had on hand.

The S’mores came out gooey and delicious – and now I will be able to make them all year long!

Gooey S’mores Bars

1 envelope pouch (1 lb. 1.5 oz.) sugar cookie mix

1 cup graham cracker crumbs

1 cup (2 sticks) butter, melted

2 cups semi-sweet chocolate chips

4 cups miniature marshmallows

Instructions:

Preheat oven to 375 degrees.

In a bowl, mix together pouch of cookie mix and graham cracker crumbs. Add melted butter and stir until dough comes together.

Press dough into a 13×9 inch pan, lined with parchment paper. (This will make it easy to remove from pan)

Bake 15-18 minutes or until crust is set.

Pour chocolate chips on top of warm cookie crust. Let sit for a few minutes to melt, and then spread carefully over crust.

Set oven to top broil.

Pour marshmallows over the melted chocolate. Place pan 5-6 inches below broiler and cook until marshmallows begin to toast.

Keep a close eye on the marshmallows as they cook very quickly! This should only take about 15 seconds.

Cool for 5 minutes. Remove from pan and cool 5 more minutes.

Cut into bars and serve warm.
