Easy Summer Appetizer: BLT Tomato Bites

Could any recipe go wrong with bacon as a main ingredient? I think not. When you make this scrumptious little appetizer, you and your guests will realize each and every taste of these BLT Bites packs a huge amount of flavor. They are so addictive; you will not be able to stop at just one!

I was looking for  simple appetizers to serve at our daughter’s graduation party and found this in my trusty Taste of Home Best Loved Recipes cookbook. We were expecting a pretty large crew, so the recipe needed to be easy, fast, and look nice on a table. The original recipe calls for only six ingredients, but to save time in the kitchen -and honestly making another trip to the grocery store – I improvised. I did not have green onions on hand so I used dried chives instead and the recipe called for all mayo, of which I was running low, so I added sour cream.

With a pastry bag – or sandwich bag with corner snipped – these are a snap to put together. The most time consuming part is scooping out the pulp of the little orbs. I really loved how the tomatoes presented, but to save time for this particular party, I needed to think of a way to share with even less effort. (Had to keep realistic expectations!)  Even with the minor changes, the BLT Bites were still amazing and I can see why it was ranked as one of Taste of Home’s Top 100 recipes! So if you are looking for an easy recipe to bring to your next barbecue make sure this is at the top of your list.

Easy BLT Bites – Ingredients:

  • 1-2 pints of cherry tomatoes
  • ½ pound bacon, cooked and crumbled
  • ¼ cup mayonnaise
  • ¼ cup sour cream
  • 2 Tbsp. grated Romano cheese
  • 1 Tbsp. dried chopped chives

To Make:

  1. Cut a thin slice off top of each tomato and scoop out pulp.
  2. Place upside down on paper towel lined tray to dry.
  3. In bowl, combine all other ingredients and stir well.
  4. Place into pastry bag (or sandwich bag with tip snipped) and pipe into tomato centers. Refrigerate at least 1 hour before serving for filling to set.

Alternative serving suggestion:

Place filling into decorative bowl on top of 1 large lettuce leaf. Surround bowl with multi colored loose tomatoes or place 1-2 on small bamboo skewer and fan around bowl.

This also goes great with multi-grain crackers or small baguette slices.
