Easy Holiday Breakfast: Eggs in Puff Pastry Shells

Everyone needs a good holiday morning meal that's impressive but easy because the holidays are about family, not being in the kitchen while everyone else is playing games and laughing, right?

It seems like the whole family wants a tasty breakfast, but no one wants to make it.

These baked eggs can be prepared in less than 30 minutes and make for a beautiful addition to your brunch table or holiday breakfast time.

It might even be fun to bring some of the kids in to help.

What does your traditional holiday family brunch look like? We often switch it up. Sometimes I make my favorite blueberry muffins with eggs and bacon. Other times it is baked French toast or baked oats. If I'm really feeling ambitious, I'll make homemade cinnamon rolls.

Last year, I spruced up my cinnamon rolls by adding bacon throughout the dough batter and topping them with a maple frosting. They were perfectly decadent — as a holiday brunch should be.

I imagine these baked eggs would go perfectly with a big bowl of fruit salad and some muffins or coffee cake. But whatever you choose to serve with them, they'll be the stars of the show. I promise. And they'll get you in and out of the kitchen faster so you can be with the ones you only see a few times a year.

Baked Eggs with Potatoes and Bacon in Puff Pastry Cups

INGREDIENTS

1 sheet of puff pastry, defrosted (or six slices of bread)

3 slices of bacon, cooked and crumbled

1/2 onion, chopped

2 tablespoons of olive oil

2 new potatoes, cut into half-inch cubes (or 1 medium potato)

6 eggs

salt and pepper

freshly grated Parmesan cheese

 

DIRECTIONS

Preheat oven to 400 degrees.

Cut pastry (should be at room temp) into slightly larger squares than the muffin cups or ramekins (I use a pizza cutter). Line the muffin cups or ramekins with the pastry, folding around the sides to make the pastry fit. You can use bread here as an alternative to puff pastry. Pierce bottom and sides with a fork, then brush the pastry with melted butter.

Saute onion and potato in olive oil for a few minutes, then salt and pepper to taste. Spoon potato and onion into ramekins, sprinkle with bacon crumbles, then crack each egg over the potato mixture.

Sprinkle with salt and pepper, then bake for 10-12 minutes or until egg is set to your preference. Serve with freshly grated Parmesan on top.

    Oh, this looks amazing. I’ll have to experiment with different gluten-free breads or pastries (tends to be harder, since the lack of wheat gluten makes them less malleable). Even if everything crumbles, it’ll be a delicious trial.
