Dinner Made Simple with Easy Risotto
Since Thanksgiving arrived so late in the calendar this year leaving only a few weeks before Christmas, as of now the holiday rush is on! Between working copious hours in a small retail store, getting my cookie dough baked and decorated, and sending gifts to family in far off places, I need dinner to be as simple as it can be. When a neighbor shared this recipe for easy risotto, I could not wait to try it.
When I am at a restaurant, I try to order items I would normally not make at home. When I see risotto on the menu, I immediately place that on my list of choices. I love the creamy, warm rice dish, especially if it has delicious add-ins like mushrooms, seafood, or chicken. Risotto is one of my favorite menu items because it definitely falls into the category of a dish I would not make at home due to the length of time needed to stand next to the stove, constantly stirring.
Enter my lovely neighbor who was kind enough to share this easy risotto recipe that requires only enough stirring to melt in butter and cheese. If you have an oven proof pot, chicken stock, a bag of Arborio rice, a few pats of butter, Parmesan cheese, and a little bit of wine – my friends, in 30 minutes, you too can indulge in a true Italian comfort food!
You can eat this dish plain, or add in anything your heart desires; vegetables, chicken, shrimp, scallops … the possibilities are endless. When I made this the other night for dinner, I added shrimp that was sautéed in a little bit of butter, half a minced onion, 2 cloves of garlic (also minced), salt and pepper, and a hefty pinch of parsley. I served it all up with a side of steamed, fresh green beans. You could stir in roasted butternut squash, asparagus, mushrooms, or any favorite vegetable to make this a nice vegetarian dish, or add shrimp, scallops, lobster, crab, or grilled chicken.
½ cup Arborio rice
4 cups chicken stock/broth
Place in oven proof pot, place lid on top and put in 350 degree oven for 30-45 minutes
Remove and place on stove over low heat.
1 cup Parmesan cheese
1 cup chicken broth
½ cup white wine
3 Tbsp. butter
salt & pepper
If you want to add in veggies or cooked chicken/shrimp, etc. do so now.
Stir for 2-3 minutes.
See? I told you – so incredibly easy! Pour in a pot and let your oven do the work! This is a great easy dinner, especially during the rush of the holiday season, although my guess is that you will make this well beyond and keep it in your dinner rotation throughout the year!
