Dinner Made Easy with Homestyle Chicken Divine

chicken divineWhen the mercury begins to drop, I start to grab recipes from my book that are quick, easy and considered to be true comfort foods. Nothing can beat that description than a great casserole, especially when you can use leftovers for true ease. When I came across this recipe, years ago for Homestyle Chicken Divine, I knew it was a keeper. I can’t remember where I found it, but looking over the well-worn corners of the card it is written on, I make it often and it doesn’t last long.

The original recipe calls for frozen broccoli and sour cream, but I have tweaked it over the years and have substituted green beans and plain yogurt for a healthier version. Not that we dislike broccoli, it is one of our favorite veggies, however, we like green beans too and don’t eat them enough, hence their appearance in this recipe. Do not be fooled that a yogurt substitute will take away the creamy, rich flavor of this Chicken Divine casserole. On the contrary, this dish retains every bit of creaminess in every single bite.

After you try this dish of deliciousness, I know it will be a well-worn recipe in your book too.

I like to buy large packages of chicken and prepare ahead for a few dishes. I will cut some in bite sized pieces or into strips for say a stir-fry, or I will par boil a few breasts for when cooked chicken is called for in a recipe. But a real time saver is using left over roasted chicken, which already has such amazing flavor.

 Easy Homestyle Chicken Divine

  • 3 cups cooked chicken, cut in bite sized pieces or shredded
  • 1 bag (16 oz.) frozen green beans, thawed (I like using whole beans)
  • 1 can (10 ¾ oz.) cream of broccoli soup
  • ¼ cup plain yogurt ( I like Fage brand)
  • ¼ cup mayonnaise
  • 1 cup shredded cheddar cheese
  • ½ cup plain Panko bread crumbs
  • 3 Tbsp. butter, melted

 To Make:

1. Preheat oven to 350 degrees.

2. Place thawed green beans in 13 x 9 pan. Top with cut or shredded cooked chicken.

3. In separate bowl, mix soup, yogurt, and mayonnaise. Pour over chicken and green beans and spread to cover entire pan.

4. Top with shredded cheese then breadcrumbs.

5. Drizzle melted butter over top.

6. Bake, uncovered for 30-40 minutes until light golden brown and bubbly.

7. Let cool for 5 minutes before serving.
