Slow Cooker BBQ Chicken

             

Are you looking for an easy to prepare, healthy dinner that your family will completely enjoy? I have the recipe for you! All you need is a crockpot, chicken, and your favorite barbecue sauce.

I’ve been cooking crockpot recipes for a long time. It has been the saving grace on long days filled with meetings, school, and sport activities that last well into the dinner hour. What could be easier than adding ingredients, setting the time, and 6 to 8 hours later having dinner ready as you walk in the door? Not a thing if you ask me. Although, there have been days where I have not planned ahead of time – meaning I have not defrosted – or better yet, have forgotten to push start (oh, yes, this has happened) leaving me to quickly dial the local pizza shop!

This year will be different, because of a recipe that my trainer shared with me to help incorporate good protein and nutrition into my daily meal plan. When she gave me the recipe, I could not believe I had not thought of this before. It was one of those moments where you say to yourself ‘Why didn’t I think of that?!’ This is packed with all you need for a healthy dinner or leftover lunch and the best part is the variety of dishes or meals that can be made from this one recipe.

             


What you will need:

4 boneless, skinless chicken breasts

1 bottle of your favorite barbecue sauce (I use STUBB’S Smokey Mesquite)

3 sweet potatoes, peeled and cubed (optional)


To Prepare:

Place chicken in crockpot.

If using sweet potatoes, add before sauce.

Cover with entire bottle of sauce.

Cover and cook on low for 3 hours.

Shred chicken with 2 forks and stir.

Serve on sandwich rolls with a green salad.
