Chicken and Vegetable Pasta with Lemon Garlic Sauce
Sometimes the simplest dinners are the best. This easy dinner recipe for Chicken Vegetable Pasta satisfies the pasta cravings in all of us, yet also supplies a good amount of hearty vegetables and protein, all tossed in a flavorful sauce. (I'm days away from my third trimester with my first baby. I'm looking for as many protein-rich healthy options as possible right now and this certainly does a fine job of that.)
There are easy ways to liven up any of your routine dinners with a little vitamin boost. Do you often toss a frozen pizza in the oven? You could quickly slice up bell peppers to top your pizza before it hits the oven. Or do you frequently make a big batch of spaghetti? If so, finely chop zucchini and add this into your meat sauce for some extra Vitamin C and B. Are you a smoothie family? If your family enjoys the classic strawberry banana smoothie, you may try adding in some greens like kale or spinach next time. The greens will only change the color while leaving the taste familiar. Whatever your go to dishes are in your family, try changing things up this week by adding in a few vegetables to brighten things up!
Chicken & Vegetable Pasta with Lemon Garlic Sauce
2 lbs chicken
1lb Penne Pasta
4 cups uncooked vegetables (I used green beans and carrots)
4 tablespoons olive oil
Lemon Garlic Sauce
3 cloves garlic, minced
1/4 c. olive oil
juice and zest of 1 large lemon
1/4 c. chicken broth
2 tablespoons heavy cream
1/2 tsp pepper (freshly ground is best)
1/3 c. freshly grated parmesan cheese
1/4 c. parsley chopped
In a large sauté pan, ook chicken in 2 TB olive oil, seasoning with salt and pepper. Once chicken is done, set aside on a separate plate. In the same pan saute 1/2 of the vegetables in 1 TB olive oil for 2 – 4 minutes on medium high heat. Remove then add the other half of the vegetables and one more TB olive oil, cooking the vegetables the same way.
For the sauce:
In a large skillet, cook garlic in olive oil until golden. Add lemon juice, chicken broth, cream, and freshly ground pepper. In a large bowl toss pasta, vegetables, garlic mixture, cheese and parsley.
