Chicken Asparagus Roll Ups
Backyard gardens are about to be full of the first taste of spring, which means it’s asparagus season! Long green stalks that taste great on a crudité tray, in salads, soups, roasted or steamed. However you like this vegetable, I invite you to try this recipe for chicken asparagus roll ups for your next dinner! It’s not complicated and is ready in less than an hour.
For only having basically 4 ingredients, these chicken and asparagus roll ups taste phenomenal and highlight each ingredient’s flavor without overpowering the others. This recipe is easy to make after a busy day, yet fancy enough to make for a casual dinner party.
When preparing this dish, be sure to use the freshest part of the asparagus stalk. A very simple way to do this is to gently bend a stalk with two hands, and it will snap at the freshest point. Place the tip even with other tips in your bunch and using this as a measuring guide, cut all stalks with a knife where the first stalk snapped.
8 skinless chicken breasts, cut thin
1 Tbsp. olive oil
1 clove garlic, minced
1 cup grated Asiago cheese
1 tomato, sliced into 8 slices (1/4 inch)
8 asparagus spears, halved lengthwise, then cut in half
Salt & pepper
Preheat oven to 375 degrees.
Salt & pepper both sides of chicken.
Heat oil in large skillet over medium- high heat. Cook chicken and garlic until chicken is golden brown on one side only. Do not turn chicken. Transfer chicken to baking sheet and discard garlic.
Add a generous pinch of cheese on top of chicken, place a slice of tomato, and top with 4 asparagus spears. Roll up and secure with toothpicks.
Sprinkle with remaining cheese and bake for 15-20 minutes.
Remove toothpicks before serving.
