Bring on the Grill! Easy Chicken Kebabs
We are only a few short days away from the calendar declaring the “official” start of summer, but I’m ready to begin right now! How about you? It is always a crazy flurry of activity in our house with the end of school, but this year especially as our oldest is graduating and heading off to college. I still cannot believe it! We will be busy preparing for this big life event and soaking in every last minute of family time we can before the big day. So that means this summer, I am all about the easy, quick recipes.
Grilling fits the requirements perfectly and this recipe for Easy Chicken Kebabs could not be any easier! It has a secret ingredient that I discovered makes the BEST marinade and I am going to share that with you here so you can save time and still have a fantastic tasting meal in no time flat! What is the secret ingredient?
Believe it or not, this bottle of goodness can be found in any supermarket in many varieties. I have found that plain Italian Dressing, either brand name or store brand create a flavor that always produces the question “This is so good, what is this cooked in?” When I say Italian Dressing, guests are shocked. It’s versatile too- you can use it on anything; vegetables, chicken, beef, pork and even fish- swordfish being a favorite and is the perfect marinade for kebabs.
This recipe is easily made with minimal prep time. If you have an hour, you are good to go!
Easy Grilled Chicken Kebabs
- 1 bottle (16 oz.) Italian Dressing
- 1 pound chicken tenders, cut in 1-inch pieces (about 3 pieces per tender)
- 2 peppers (color of your choice), cut in 1-inch chunks
- 1 sweet onion, quartered
- cherry tomatoes
- any vegetable your family likes- try squash, zucchini or mushrooms
If using wooden skewers, be sure to soak in water at least 20-30 minutes before threading. This will prevent them from burning when placed on grill.
Chop up vegetables on cutting board first. Be sure to make the pieces fairly large so they do not fall off skewer.
Place vegetables in large zip-loc bag and pour (or squirt) about 1/3 of dressing. Seal bag and turn over a few times to incorporate over contents. Set aside.
Next, cut chicken in cubes and place in another large zip-loc bag. Pour about 1/3 of bottle (or a little more) over chicken. Seal bag and gently squeeze bag while turning over so that all of meat is covered.
I separate my vegetables and meat because we have a vegetarian in the house. This way I can make vegetable kebabs too!
Place bags in refrigerator for at least an hour. They can be kept overnight if you want to plan ahead.
When ready to grill, prepare grates by rubbing with a small amount of Canola oil and heat to medium, medium-high.
Thread skewers, alternating meat and vegetables.
Place on grill (or grilling pan) and cook about 5 minutes. Turn kebab and cook another 5 minutes. Continue to turn until meat is cooked to a safe temperature.
Serve with a tossed green salad and your favorite summer time sides!
