Cinco de Mayo is coming and if you're anything like me, that holiday–along with a celebration of Mexico, of course–means one thing: it's taco time! 

I mean, I would say it actually means two things: tacos and margaritas, but I'm pregnant at the moment, so I'm sticking with the taco theme and we'll save the margaritas for later. Pregnant or not, however, I can appreciate a good taco, and if that taco can be made with minimal effort by tossing everything in the crockpot to cook, that's even better in my book. So read on for some tantalizing taco recipes you can totally pull off in the crockpot for Cinco de Mayo.

Again, it just never occurred to me to make beef tacos in the crockpot, but I wish I would have tried it before, because I'm just not a great cook–and because tacos are about the easiest meal ever, I'm even more excited to make it even easier!
