3 Brilliant Ways to Dress up Chicken Noodle Soup

Thursday, October 25, 2012 by Becky Rosenthal from EverydayFamily Eats

Dress up canned chicken noodle soup

Cooler weather and busy fall schedules call for a big batch of chicken noodle soup. Many of us don't have time to make homemade chicken noodle soup but there are many ways to amp up an average can or two of chicken noodle soup.

First of all you must buy a quality can of chicken noodle soup.  We prefer Campbell's 100% natural Chicken Noodle Soup that has whole grain noodles. Once you've stocked your pantry with you soup of choice here are a few tips on how to boost your canned soup:

  1. Add your own vegetables. We like to add sliced carrots and celery since those that come in a can are usually tiny and unsubstantial.  You could also add broccoli, spicy peppers, kale or spinach.  If you add any leafy greens make sure you add them right before eating or they will get too soggy.
  2. Change up the flavor.  Add 1/4 cup coconut milk, 1 teaspoon of lime juice, and 1 teaspoon of fresh cilantro (per 1 can of soup) to make a Thai Chicken Noodle Soup.  Or add half of a diced jalapeño, 1/4 cup sliced bell pepper, 2 tablespoons shredded cheese, and a few crushed tortilla chips (per 1 can of soup) for Mexican Chicken Noodle Soup.
  3. Boost the flavor with additional herbs. Try adding oregano, basil, thyme, and ground pepper to boost up the basic flavor of canned chicken noodle soup. Add small amounts of herbs at a time and taste test until your preferred flavor is reached.

Hope this helps make your evenings when canned soup is on the agenda more vibrant and exciting!
